Turkey, Cheddar and Apple Sandwich

Deli Turkey Cheddar and Apple

First off, I wanted to share with you how excited I was when a fellow blogger featured me in one of her interview series blog posts!  It was truly an honor to be selected by one of my favorite bloggers, Bluebalu, who writes about her experiences in Hong Kong (and travels) and shares some beautiful photography.

Now onto this quick Turkey, Cheddar and Apple Sandwich recipe I wanted to share with you…though I’m not even sure it qualifies as a recipe, it’s more like throwing together a simple sandwich.

The crispness of the apple, the tanginess of the mustard paired with the slightly sweet turkey works perfectly with the classic cheddar cheese.

Experiment with your sandwich, try different deli meats (ham or roast beef), a honey Dijon mustard maybe, or a creamy brie cheese or maybe even try using pears!

Turkey, Cheddar & Apple Sandwich
Serves 2

4 slices of whole grain bread (or any type you prefer)
8 slices of deli honey roasted turkey
4 slices of sharp cheddar cheese
1 Granny Smith apple
Wholegrain mustard
salt

Peel the Granny Smith apple and slice thinly.  If you’re not going to eat this sandwich immediately, soak the apples in slightly salted water (1/2 tsp salt to 4 cups of cold water), this will prevent it from browning.

Spread a thin layer of whole grain mustard onto a slice of the bread. Layer 2 slices of cheddar cheese, 4 slices of deli turkey and some apple slices onto the mustard-spread bread, then top with the a plain piece of bread.

Repeat for the remaining sandwich.

Cut into halves or quarters and serve.  Enjoy!
